Fruit & Vanilla eggless cake |
Vanilla. Something basic. But a bit fruity elevates the
plain to another plane.
Frustrated with the frequent and unannounced power
cuts in the National Capital Region of India— it must be true of elsewhere in
the country as well—I let go of my resolve to bake the conventional way --using
eggs, a lot of white butter (Managed to
get good fresh white butter at Spencer’s in Pacific Mall, Kaushambi) and the
good old Bajaj oven preheated to 180
degrees, to bake for about 30 minutes, or till I am able to breathe the cake
aroma .
So, it was back to the old faithful, tried and tested.
Eggless, little butter and microwave .
But instead
of MWing for 12 minutes, I used the Combo mode throughout , where the
gadget alternates between MW and grill modes. The general idea was to get a crust which is not possible with simple microwave baking.
The texture and
taste, as good as any. If I had not been impatient to cut it—after sprinkling a
bit too much of icing sugar and a bit too little of lemon rind—it would have looked…better

Here goes the recipe
All purpose flour (maida) –1 cup
Sugar- Half cup
Baking powder- Half a teaspoon
Cooking Soca- Half a teaspoon
Butter-4 tablespoons
Home made Yoghurt-1 cup
Vanilla essence—half a teaspoon
Broken walnuts, chopped orange peel, tootifrooti—Half a cup
in all
Rind of one lime

The best thing about this cake is it is a ONE POT affair.
Throw in everything into one big mixing bowl, stir till smoother—not more than
two minutes really. Pour into a greased baking dish, and put it into a
Microwave oven with combo mode for 15 minutes. You will get a nice golden
crust— got impatient and sprinkled icing sugar without clicking a picture at
this stage.
Let it rest in the MW
for ten minutes before taking it out. You can eat it plain, or dress it up. I
justed sprinkled icing sugar and grated some rind off a small lemon.
The next step…take a knife and ... go for it.
